10K DONE! now onto the 15...WOOPWOOP! and a menu....

I finished my 10K succesfully at just under a 10 minute pace...so 1 hour, 1 minute, 30 seconds. Not too bad for this cheerleader-soccer player become mother, and then a runner!!! Fresh & Healthy for Spring!  So this week I'l be perfecting those recipes and incorporating them into my menu.... What else...hmmmm...a wedding Saturday YAY Amanda and Brad! A quick menu- 5/9 through 5/15

This beautiful weather has got me outside opening the pool, cleaning out weeded over garden beds and now onto planting- SOoooo my menu is late and full of quick fixermabob types of meals! Plus lots going on with the kiddos and my 10K this weekend, woopwoop! Here ya' go...

Monday: we went to the FINALLY open Florentine's in Belmont-1/2 off pasta! Tasty but the service royally stunk!

Tuesday: T'was taco Tuesday!!!

Wednesday: juicalicious ribs, baked beans, veggies n' dip, fresh fruit

Thursday: cheeseburgers and French fries, corn on the cob (all per my Fred's request:0))

Friday: some sort of tasty pasta to fuel me pre-run! Probably pesto-tomatoey pasta... Salad and bread too...

Saturday: hmmm... Well, I was suppose to go out with the girlz after my 10K- but looks like that may not happen. I am thinking some maple Dijon glazed herb rubbed salmon sounds delish, add in some sauteed green beans and tricolored peppers, rice...Dessert! as a reward for finishing the race- homemade carrot cake OR the Chantilly cake from Arnies, yum.

Sunday: Mediterranean grilled chicken, roasted asparagus, roasted sweet potatoes, salad with blue cheese, dried cherries and pecans-razzzzberry vinaigrette

Here's to a late great week! Enjoy the WARM weather finally! This is our payback for such a coooool spring! Yay!

FamMenu and Happenings for the week 5/2-5/8

Well...last week was busy and somber at the same time. I was teaching my Hand's On cooking class on Monday, when I recieved a text from my Bestie for ages- that her father, who has been fighting a bitter battle with cancer, was in his final stages, and that she was heading up from Kentucky with her husband. This is the friend that I spent my whole childhood with. We did everything together, thus her family was like my family. Her father, who I affectionately called Mr "D", was also my Chiropractor and both he and his wife, Mrs. "D" were two of my biggest Chef Robin fans :0) I got the phone call on Wednesday at lunchtime that he had passed.... My heart goes out To Mrs. "D", Alyssa, Craig & Erica and the rest of the Fam....I love you all and your father was one of the kindest people I knew. His dry humor and belly laugh cracked me up. He will be missed dearly.

So last week was sandwiched with a class Monday and Friday and then all kinds of unpleasantries mixed inbetween and around!. BLAH!!!

Here is hoping for a better week It started yesterday with a nice sunny day and a great 5 mile run ouside. And today my OLD brother (it' s his birthday today :0) Is heading back to Denver to see his girlies, Gisele and Kaylee, so safe travels, bro! Love ya! Training continues this week, only TWELVE days until my 10K woopwoop!!!

Anyway ,who knows what THIS week will bring, but here is the plan...Stan.... ...the FamMenu:

Monday: May be getting half price Sushi with some friends tonight....if not, Mongolian Beef that I didn't have time to make last week!

Tuesday: Grilled wild Cod with kalmatas, feta and roasted peppers, couscous, roasted "spare-guts" :0)

Wednesday: Spaghetti with meatballs, homemade bread with gruyere, salad with hard boiled eggs, bacon and tomatoes, italian style green beans

Thursday: Gotta go Mexican for the fifth of May! I am thinking the enchilada recipe on my blog...but made with chicken instead! And maybe my Easy Tortilla soup, as well...to get some veggies in! I'll let the kiddies have some ice cream with funnel cakes sprinkled with cinnamon sugar! (they have been BEGGING to make funnel cakes, we got a boxed giftset from Gigi and Grampy months ago!!)

Friday: Mooobie Night! Pizza and ice cream with all my lovies...hoping to FINALLY watch "Tangled" :0)

Saturday:  Pulled BBQ Pork on buns, fruit salad, pasta salad veggies and dip

Sunday: I am thinking...Hubby and I can make something together :0)

Have a great week everyone! Hug your moms, dads, siblings, families  and friends and tell them how much you love them!
