Delish Vegetarian Class tonight!

Those attending will be making two savory dishes that deliver on flavor, and are easy to make!
Whole Wheat Rollatini with sauteed mushrooms and fresh spinach, all rolled up with garlic, ricotta ,mozz and parm, served in tomato sauce, yum. Hand over the crusty bread, this one is delish!
Next on the docket-going to Mexico...for Gumbo! (no okra here!) A spicylicious blend of green chiles, salsa, black beans, corn & cilantro, poured over hot rice and topped with a serving of avocado, sounds good, doesn't it???
Next week-serving up Curried Veggies & Tofu- in a sweet n' spicy coconut red curry sauce, over Jasmine rice OR red lentils.... a recipe chock-full of veggie power, sweet taters, broccoli & cauliflower, edamame, etc...CURRYlicious :0) And a great Soup n' Sammie combo-to be announced....
